Green Goddess Dressing with Tarragon is one of my favorite salad dressing, however, this is so good it can also be used as a dip for chips at your next party. Let it set for a couple of hours after you make it so that all the flavors fuse together.
1/2 fresh avocado
2 tsp anchovy paste
2 small garlic cloves, minced
3/4 cup mayonnaise
3/4 cup sour cream
1/4 cup chopped fresh tarragon
1/4 cup chopped fresh parsley
3 Tsp Chopped fresh chives
2 Tsp fresh squeezed lemon juice
Sea salt and fresh ground black pepper to taste.
Method
Put all of the ingredients in a blender and blend until you get a nice evenly smooth dressing, about 35-45 seconds. Green Goddess Dressing with Tarragon will last in the refrigerator for a week, but is so easy to make that making fresh in no problem. You can change the flavor by replacing the parsley with basil.

I remember when I discovered Green Goddess dressing as a child. I thought it was the most marvelous substance on the planet. Since then, my fascination with bottled GG dressing has waned . . . but I’ve never seen a recipe for it before! I’m going to try this, it looks delicious!
