Ever plant some dill then wonder what to do with all of it? One choice would be to make oven Roasted Potatoes With Dill Sauce for dinner. There are a lot of other recipes that use dill, just in case you don’t use it all up making dill pickles.
Roasted Potatoes with Dill
2 pounds new potatoes, peeled
2 tablespoons Olive oil
Sea salt and fresh ground black pepper
Heat oven to 395° F. On a rimmed baking sheet, toss the potatoes with the oil, ¾ teaspoon salt, and ¼ teaspoon fresh ground pepper.
Roast, tossing once, until tender, 25 to 35 minutes.
For the Dill sauce
In a small, heavy saucepan, melt 2 tablespoons of butter over low heat.
Blend 2 tablespoons of flour into the melted butter.
Add 1/4 teaspoon of salt.
Cook over low heat, stirring, for 4 to 5 minutes to get rid of the ‘flour’ taste.
Slowly add 1 cup of milk, stirring constantly.
Continue cooking slowly until smooth and thickened.
Add 2 tablespoons fresh dill, finely chopped.
Remove from heat.
Pour dill sauce over potatoes when ready to serve.

Oh wow. This looks fabulous. I am always wondering what to do with new potatoes ( they are not my favourite, I find them boring) Here’s a wonderful way to serve them with grilled fish maybe?

Over here my fish of choice for the grill is Red Snapper. Our home in Mexico is in
a small fishing village and we can go down and meet the boats as they come in. We buy
our fish from the fisherman when they dock. They even clean them for us. When we’re
in the states, it is a little harder to get our fish, we need to travel about 60
miles so it doesn’t happen to often. These potatoes would go wonderfully with the fish.

I’ve never thought of doing a white sauce with dill – let alone potatoes. What an interesting idea. I could see this being a big hit at holidays and parties adding a little flair to the standard potato fare. Of course, I’ll to try them first. Good thing I’m a big potato fan
